May 16th is Celiac Disease Day, a date to raise awareness of the millions of people living with celiac disease and to remind everyone that eating gluten-free shouldn't mean giving up on flavor, pleasure... or shared plans.

Being celiac is not a fad, it's a necessity

Celiac disease is an autoimmune disorder that affects between 1 and 2% of the population. When a person with celiac disease consumes gluten (a protein found in grains such as wheat, barley, and rye), their immune system reacts by damaging the small intestine. This not only causes discomfort but also prevents the proper absorption of nutrients and can lead to long-term problems such as anemia, chronic fatigue, weight loss, infertility, or even osteoporosis.

Added to this is the social aspect: eating out, traveling, shopping at the supermarket… everything becomes a constant exercise in vigilance and mistrust. Because gluten is in far more products and foods than it seems.

And even if you're not celiac... gluten can still affect you.

There is a growing body of research linking gluten to digestive problems, inflammation, and general malaise, even in people who don't have celiac disease. Therefore, reducing or avoiding gluten can be a healthy choice for many people, especially those looking to improve their digestion, energy levels, or overall well-being.
